Abstract
The text addresses the relationship between migration, insertion strategies and transformations of urban space. It argues that the proliferation of Peruvian-cuisine restaurants in Santiago forms a landscape of migration that operates both as a transversal insertion strategy for different segments of the Peruvian population and as a form of recognition of them as "other" on the part of Chilean society. Based on a quantitative and qualitative study, the article describes the main features in the development of local Peruvian cuisine, identifying their development dynamics, locations and the networks that give them life. Finally, the Peruvian restaurants in Santiago demonstrate a complex assemblage of the global, national and local dimensions of migration.
