Natalia Rojas is a Laboratory Chemist and a graduate in Chemistry, with a Master's degree in Analytical Chemistry and postgraduate studies in Nutrition and Healthy Eating. She currently serves as Director of the Department of Transversal Health Training at the Faculty of Medicine and Health Sciences of the Central University of Chile, Coquimbo campus. Her research focuses on the analysis of bioactive compounds of plant origin, with an interest in the characterization of extracts, oils, and natural matrices, as well as the study of their potential applications in healthy eating and the development of innovative products.
